Preparing the Vegetables

    Roast the Vegetables

    Preheat the oven to 425°F (220°C). Chop the bell peppers, zucchini, and red onion into bite-sized pieces. In a large bowl, combine the chopped vegetables with olive oil, salt, and black pepper. Toss until well-coated.

    Arrange and Roast

    Spread the seasoned vegetables on a baking sheet in a single layer. Roast in the preheated oven for about 20-25 minutes, or until tender and slightly caramelized, stirring halfway through.

Preparing the Salmon

    Prepare the Salmon

    While the vegetables are roasting, season the Atlantic salmon fillets with salt and black pepper on both sides. Heat a non-stick skillet over medium-high heat.

    Cook the Salmon

    Add a small amount of olive oil to the skillet. Place the salmon fillets skin-side down and cook for 4-5 minutes, or until the skin is crispy. Flip the fillets and cook for an additional 3-4 minutes, or until the salmon is cooked through and flakes easily with a fork.

Making Citrus Butter

    Prepare Citrus Butter

    In a small saucepan, melt the butter over low heat. Once melted, stir in the lemon juice and orange juice. Cook for an additional 1-2 minutes, allowing the flavors to combine.

Assembling the Dish

    Combine and Serve

    On a plate, arrange the roasted vegetables and place the cooked salmon fillet on top. Drizzle with balsamic vinaigrette and sprinkle with feta cheese. Finish with a drizzle of the citrus butter over the salmon and vegetables. Serve warm.
