Preparation of Roasted Onions and Peppers

    Roast the Onions and Peppers

    Preheat your oven to 400°F (200°C). In a bowl, toss the sliced onions and bell peppers with olive oil, salt, and black pepper. Spread them in a single layer on a baking sheet and roast in the oven for about 20-25 minutes, or until they are tender and slightly caramelized. Stir halfway through to ensure even roasting.

    Make the Mayonnaise

    In a food processor, combine the chopped roasted red peppers, mayonnaise, minced garlic, and lemon juice. Blend until smooth. Season with salt and black pepper to taste. Set aside.

Assembling the Sandwich

    Assemble the Sandwich

    Slice the French rolls in half. Spread a generous amount of the roasted red pepper mayonnaise on the bottom half of each roll. Layer the shaved prime rib on top, followed by the roasted onions and peppers. Top with slices of Swiss cheese.

    Melt the Cheese

    Place the assembled sandwiches on a baking sheet and put them under the broiler for about 2-3 minutes, or until the cheese is melted and bubbly. Keep a close eye to prevent burning.

    Remove from the oven and top with the other half of the rolls. Cut in half and serve immediately.
