    Prepare the Ingredients

    Gather all your ingredients and prepare them. Chop the onion, green bell pepper, and celery; mince the garlic; and dice the tomatoes if using fresh.

Cooking

    Sauté the Vegetables

    In a large pot or Dutch oven, heat the olive oil over medium heat. Add the chopped onion, green bell pepper, and celery. Cook until they are softened, about 5 minutes. Stir in the minced garlic and cook for another minute.

    Add the Spices

    Sprinkle in the Cajun seasoning, paprika, thyme, salt, and black pepper. Stir to combine and cook for 1-2 minutes until fragrant.

    Combine Rice and Liquids

    Pour in the diced tomatoes and chicken broth. Bring the mixture to a boil and then stir in the long-grain rice. Add the bay leaves.

    Reduce the heat to low, cover the pot, and simmer for about 20 minutes or until the rice is tender and has absorbed most of the liquid.
