Prepare the Ingredients
Dice the chicken breast into bite-sized pieces. Chop the green bell pepper and onion. Mince the garlic cloves. Slice the andouille sausage.
Cooking

Cook the Sausage
In a large pot or Dutch oven, cook the sliced andouille sausage over medium heat until it starts to brown, about 5 minutes. Remove and set aside.

Add Chicken and Seasoning
Add the diced chicken to the pot and cook until browned, about 5-7 minutes. Stir in the Cajun seasoning, salt, and black pepper.

Add Rice and Liquid
Stir in the long-grain rice, diced tomatoes (with their juices), chicken broth, and the cooked sausage. Bring to a boil.

Simmer
Reduce the heat to low, cover the pot, and let it simmer for 20-25 minutes, or until the rice is cooked and has absorbed the liquid.

Add Shrimp
In the last 5 minutes of cooking, stir in the shrimp and cover again until they are pink and opaque.

Serve the jambalaya hot, accompanied by slices of fresh cornbread.
