Deglaze with Wine
Pour in the dry white wine and scrape the bottom of the pot to deglaze. Allow the wine to reduce for about 5 minutes.

Add Broth and Flavorings
Add the beef broth, dried thyme, bay leaf, salt, and black pepper to the pot. Bring the mixture to a simmer and cook for 30 minutes.

Finish Soup
After 30 minutes, taste the soup and adjust the seasoning with more salt and pepper if needed. Remove the bay leaf before serving.
Baked Potato Assembly

Prepare Baked Potatoes
While the soup is simmering, bake the potatoes in the oven at 400°F (200°C) for about 45-60 minutes, or until tender. Allow them to cool slightly, then slice them open.

Add Toppings
Spoon the hot soup into bowls, then place a baked potato half on top of each serving. Add a dollop of sour cream, sprinkle with shredded cheddar cheese and chopped green onions. Top with croutons if desired.
