Cheese Curds Preparation

Prepare the Breading Mixture
In a medium bowl, combine the all-purpose flour, cornmeal, salt, and black pepper. Mix well.

Prepare the Buttermilk Mixture
In another bowl, whisk together the buttermilk and egg until fully combined.

Batter the Cheese Curds
Dip each white cheddar cheese curd into the buttermilk mixture, allowing any excess to drip off, then coat in the flour-cornmeal mixture. Ensure they are fully coated and set aside.
Frying the Cheese Curds

Heat the Oil
In a deep frying pot, heat the vegetable oil to 350°F (175°C). Use a thermometer for accuracy.

Fry the Cheese Curds
Carefully add the battered cheese curds in batches to the hot oil. Fry until golden brown and crispy, about 2-3 minutes.

Drain and Cool
Remove the cheese curds from the oil with a slotted spoon and place them on a paper towel-lined plate to drain excess oil. Repeat with remaining batches.

Combine Ingredients
In a small bowl, mix together raspberry jam, chopped chipotle peppers, lime juice, and salt. Adjust salt to taste.
