Grill the Fish
Preheat a grill or grill pan over medium heat. Grill the marinated fish fillets for about 3-4 minutes on each side, or until fully cooked and flaky. Remove from heat and let cool slightly before flaking into bite-sized pieces.

Make the Slaw
In a large bowl, combine shredded green cabbage, grated carrot, chopped cilantro, lime juice, and salt. Toss everything together until the cabbage and carrot are well coated in the dressing. Set aside.

Prepare the Chipotle Mayo
In a small bowl, mix together the mayonnaise, minced chipotle in adobo sauce, lime juice, and salt until fully combined. Adjust seasoning to taste.
Assembling Tacos

Assemble the Tacos
Warm the corn tortillas on a skillet for about 30 seconds on each side. Fill each tortilla with a portion of grilled fish, top with cabbage slaw, and drizzle with chipotle mayo. Serve immediately.
