Method

Preparation

  1. 1

    Prepare the Filet Mignon

Remove the filet mignon from the refrigerator and let it sit at room temperature for about 30 minutes to ensure even cooking.

  2. 2

    Season the Steak

Pat the filet mignon dry with paper towels. Rub the olive oil all over the steak. Season generously with salt, black pepper, and garlic powder on both sides.

Cooking

  1. 3

    Preheat the Pan

Heat a cast-iron skillet or heavy frying pan over medium-high heat for about 5 minutes until hot.

  2. 4

    Sear the Steak

Place the seasoned filet mignon in the hot skillet. Sear for 4-5 minutes on one side without moving it, until a nice crust forms.

  3. 5

    Flip and Cook

Flip the filet mignon over and cook for an additional 3-4 minutes for medium-rare, or longer if desired. If using, add a sprig of fresh rosemary and 1 tablespoon of butter to the pan for added flavor.

  4. 6

    Check for Doneness

Use an instant-read thermometer to check the internal temperature. Aim for 130°F (54°C) for medium-rare.

Resting

  1. 7

    Rest the Steak

Remove the filet mignon from the skillet and transfer to a cutting board. Tent loosely with foil and let it rest for 5-10 minutes to allow juices to redistribute.

Serving

  1. 8

    Slice and Serve

Slice the filet mignon against the grain and serve immediately. Optionally, drizzle with any pan juices or top with additional butter.
