Cake Preparation

    Melt Chocolate and Butter

    In a heatproof bowl, combine the unsweetened chocolate and unsalted butter. Melt them together over a pot of simmering water, stirring until smooth. Remove from heat and let cool slightly.

    Mix Sugar and Eggs

    In a separate bowl, whisk together the granulated sugar, large eggs, and large egg yolks until the mixture is thick and pale, about 2-3 minutes. Stir in the vanilla extract.

    Combine Mixtures

    Gradually pour the melted chocolate and butter mixture into the egg mixture, stirring constantly until well combined.

    Add Dry Ingredients

    Sift the all-purpose flour and salt over the chocolate mixture. Gently fold in until just combined. Be careful not to overmix.

    Prepare Ramekins

    Preheat the oven to 425°F (220°C). Grease four 6-ounce ramekins with butter and lightly dust with cocoa powder, tapping out any excess.

    Divide the cake batter evenly among the prepared ramekins, filling them about 3/4 full.

    Place the ramekins on a baking sheet and bake in the preheated oven for 12-14 minutes, or until the edges are firm but the center remains soft.

    Let the cakes rest for 1 minute. Carefully invert each ramekin onto a plate. Serve warm with a scoop of vanilla ice cream.
