Cake Preparation

Preheat the Oven
Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

Mix Dry Ingredients
In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, cinnamon, nutmeg, and salt until well combined.

Combine Mixtures
Gradually add the wet mixture to the dry ingredients, stirring until just combined. Do not overmix.

Bake the Cakes
Divide the batter evenly between the prepared cake pans and bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.

Allow the cakes to cool in the pans for 10 minutes, then transfer to wire racks to cool completely.

In a large bowl, beat the cream cheese and unsalted butter together until smooth and creamy.

Gradually add the powdered sugar, mixing until the icing is smooth and spreadable.

In a saucepan, combine pecans, granulated sugar, water, and salt. Cook over medium heat, stirring constantly until the sugar dissolves.

Candy the Pecans
Continue stirring until the mixture thickens and caramelizes, about 5-7 minutes. Remove from heat and spread pecans on parchment paper to cool.
Assembling the Cake

Frost the Cake
Once the cakes are completely cool, place one layer on a serving plate. Spread a layer of cream cheese icing on top, then place the second layer on top.

Spread the remaining icing over the top and sides of the cake. Top with candied pecans for decoration.
