Calamari Preparation

    Clean and Cut Calamari

    Rinse the fresh calamari under cold water. Remove the head and tentacles, and slice the body into rings, approximately 1/2 inch thick.

    Dredge Calamari

    In a bowl, mix the all-purpose flour, salt, and black pepper. Dredge the calamari rings in the flour mixture until evenly coated.

    Fry Calamari

    In a deep pot, heat the vegetable oil over medium-high heat. Once hot, carefully add the calamari in batches, frying for about 2-3 minutes or until golden brown. Remove and drain on paper towels.

Marinara Sauce Preparation

    Sauté Garlic

    In a saucepan, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1-2 minutes until fragrant, being careful not to burn it.

    Add Tomatoes and Spices

    Add the canned crushed tomatoes, oregano, basil, red pepper flakes, salt, and black pepper to the saucepan. Stir well to combine.

    Simmer Sauce

    Bring the sauce to a gentle simmer, reduce the heat to low, and cook uncovered for about 20-25 minutes, stirring occasionally.

    Finish with Parsley

    Stir in the chopped fresh parsley just before serving to add freshness to the sauce.

Dipping Sauce Preparation

    Mix Dipping Sauce

    In a small bowl, combine the mayonnaise, ketchup, lemon juice, and hot sauce. Stir until smooth and well blended.
