    Prepare the Chorizo

    In a skillet over medium heat, add the olive oil and let it heat up. Once hot, add the chorizo sausage, breaking it up with a spatula. Cook until browned and cooked through, about 5-7 minutes. Drain excess fat if necessary.

    Scramble the Eggs

    In a bowl, crack the eggs and add salt and black pepper. Beat the eggs until well mixed. Pour the beaten eggs into the same skillet with the chorizo. Cook over medium heat, stirring gently, until the eggs are scrambled and just set, about 4-5 minutes.

    Warm the Tortillas

    In a separate pan or microwave, warm the flour tortillas until soft and pliable, about 20-30 seconds in the microwave or 1 minute in a dry skillet.

    Build the Burrito

    On each tortilla, add a generous portion of the chorizo and scrambled egg mixture. Top with shredded cheese and a spoonful of salsa. Roll the tortilla by folding in the sides and then rolling from the bottom up to form a burrito.
