Method

Preparation of Broth

  1. 1

    Sauté Aromatics

In a large pot, heat the olive oil over medium heat. Add the chopped leeks, shallots, and minced garlic. Sauté until the vegetables are soft and fragrant, about 5-7 minutes.

  2. 2

    Add Tomatoes and Liquids

Stir in the diced tomatoes and cook for another 3-4 minutes. Then, pour in the white wine and let it simmer for approximately 2 minutes to reduce slightly.

  3. 3

    Add Broth and Spices

Add the fish stock or seafood broth to the pot, along with the saffron threads, cayenne pepper, salt, and black pepper. Bring the mixture to a gentle boil.

Cooking Seafood

  1. 4

    Add Seafood

Once the broth is boiling, reduce the heat to low. Add the white fish fillets, mussels, shrimp, and squid to the pot. Cover and let simmer for 5-7 minutes, or until the seafood is cooked through and the mussels have opened.

  2. 5

    Final Seasoning

Taste the bouillabaisse and adjust the seasoning with more salt and pepper if necessary.

Serving

  1. 6

    Serve

Ladle the bouillabaisse into bowls, garnish with fresh parsley, and serve hot with slices of crusty bread and a side of rouille sauce if desired.
