Preparing the Burger Patty

    Mix the Ingredients

    In a large bowl, combine the ground bison, garlic powder, onion powder, smoked paprika, salt, and black pepper. Use your hands to mix until just combined, being careful not to overwork the meat.

    Form the Patties

    Divide the mixture into two equal portions and shape each into a patty about 1 inch thick. Make a slight indentation in the center of each patty to prevent them from puffing up while cooking.

Cooking the Burger

    Preheat the Grill

    Preheat your grill or skillet over medium-high heat and add the olive oil to the cooking surface.

    Cook the Patties

    Once the grill is hot, place the bison patties on it. Cook for about 4-5 minutes on one side, then flip and cook for another 4-5 minutes for medium-rare, or longer if you prefer them more done. If adding cheese, place a slice on each patty during the last minute of cooking.

Assembling the Burger

    Prepare the Buns

    While the patties are cooking, slice the brioche buns in half and toast them lightly on the grill or in a toaster if desired.

    Assemble the Burger

    On the bottom half of each toasted brioche bun, place a lettuce leaf, followed by the cooked bison patty, a slice of tomato, and any condiments such as ketchup and mustard. Top with the other half of the bun.
