    Prepare the Focaccia

    Preheat your grill to medium-high heat. Slice the focaccia bread in half horizontally to create two thick pieces.

    Grill the Bread

    Brush both sides of the focaccia with 1 tablespoon of olive oil. Place the focaccia on the grill and cook for about 3-4 minutes on each side, or until grill marks appear and the bread is crispy.

    Prepare the Toppings

    While the bread is grilling, chop the Roma tomatoes into small cubes, dice the red onion finely, and tear the basil leaves into smaller pieces. In a mixing bowl, combine the tomatoes, red onion, basil, 2 tablespoons of olive oil, salt, and black pepper. Mix gently to combine.

    Assemble the Bruschetta

    Once the focaccia is grilled, remove it from the grill and let it cool slightly. Spread a layer of goat cheese evenly over the grilled sides of the focaccia, followed by the tomato mixture. Drizzle with any remaining olive oil if desired.
