In a large bowl, mix the flour, baking powder, salt, and black pepper. Gradually whisk in the cold sparkling water until the batter is smooth and thick. Let it rest for about 15 minutes.

Heat the oil
In a large deep frying pan, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Batter the fish
Dip each fish fillet into the batter, ensuring it is fully coated.

Fry the fish
Carefully place the battered fish fillets into the hot oil and fry for about 5-7 minutes or until golden brown and cooked through. Remove and place on paper towels to drain excess oil.

Prepare the potatoes
Peel the potatoes and cut them into thin strips for frying.
