Churro Preparation

    Prepare the Dough

    In a medium saucepan, combine water, butter, sugar, and salt. Bring to a boil over medium heat. Once boiling, add flour all at once and stir vigorously until the mixture forms a ball and pulls away from the sides of the pan. Remove from heat and let cool for about 10 minutes.

    Add the Eggs

    Add eggs one at a time, mixing well after each addition until the dough is smooth and glossy.

    Heat the Oil

    In a large, deep skillet, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Pipe the Churros

    Spoon the dough into a piping bag fitted with a star tip. Once the oil is hot, carefully pipe 4-6 inch lengths of dough into the oil, cutting them with scissors. Fry until golden brown, about 2-3 minutes on each side.

    Drain and Coat

    Using a slotted spoon, remove churros from oil and drain on paper towels. In a shallow dish, mix together the sugar and cinnamon. Roll the warm churros in the sugar-cinnamon mixture until fully coated.
