    Preheat the Oven

    Preheat your oven to 200°C (400°F). Grease and flour four ramekins to prepare for the batter.

    Melt the Chocolate and Butter

    In a heatproof bowl, combine the dark chocolate and unsalted butter. Melt them together over a pot of simmering water (double boiler method) or microwave in short intervals until smooth. Stir until well combined.

Mixing Ingredients

    Combine Sugar and Eggs

    In a separate bowl, whisk together the granulated sugar and large eggs until the mixture is pale and thick, about 3-4 minutes using an electric mixer.

    Add Chocolate Mixture

    Slowly pour the melted chocolate and butter mixture into the egg mixture while continuously whisking. This will help temper the eggs and prevent them from scrambling.

    Incorporate Dry Ingredients

    Sift in the all-purpose flour, vanilla extract, and a pinch of salt. Gently fold the dry ingredients into the wet mixture until just combined. Be careful not to overmix.

Baking

    Fill Ramekins

    Divide the batter evenly among the prepared ramekins, filling each about 2/3 full.

    Bake the Fondants

    Place the ramekins in the preheated oven and bake for 12-14 minutes. The edges should be set, but the center should still be soft.

    Cool Slightly

    Remove the ramekins from the oven and let them cool for 1-2 minutes. This helps the fondants to set slightly.

    Serve

    Run a knife around the edges of each ramekin, then invert onto a plate. Dust with powdered sugar and serve immediately with fresh berries and a scoop of vanilla ice cream if desired.
