Method

Preparation of Mushrooms

    Prepare the Mushrooms

    Clean the lion's mane mushrooms and tear them into bite-sized pieces.

    Set Up Breading Station

    In one bowl, mix flour, cornstarch, salt, black pepper, and cayenne pepper. In another bowl, whisk the egg and water together. In a third bowl, place the panko breadcrumbs.

    Bread the Mushrooms

    Dip each piece of mushroom first into the flour mixture, then into the egg wash, and finally coat with panko breadcrumbs.

Frying Mushrooms

    Heat Oil

    In a deep skillet, heat vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Fry Mushrooms

    Carefully add the breaded mushrooms to the hot oil. Fry until golden brown, about 3-4 minutes. Remove and drain on paper towels.

Waffle Preparation

    In a large bowl, mix together rye flour, all-purpose flour, baking powder, salt, and sugar.

    In another bowl, whisk together milk, egg, and vegetable oil.

    Pour the wet ingredients into the dry ingredients and stir until just combined.
