Preparation and Cooking

    Pickle the Shallots

    Thinly slice the shallots and place them in a small bowl. Mix with apple cider vinegar and let them sit for at least 30 minutes to pickle.

    Prepare the Brussels Sprouts

    Preheat your oven to 425°F (220°C). Trim the ends of the Brussels sprouts, remove any yellow or damaged leaves, and cut them in half.

    Season and Roast the Brussels Sprouts

    In a large bowl, toss the Brussels sprouts with olive oil, salt, and black pepper. Spread them out on a baking sheet in a single layer. Roast in the preheated oven for 20-25 minutes until crispy and golden brown, flipping halfway through.

    Prepare the Dressing

    In a small bowl, whisk together apple cider vinegar and honey to create the dressing.

    Assemble the Dish

    Once the Brussels sprouts are done roasting, remove them from the oven and drizzle with the apple cider dressing. Top with pickled shallots and diced local apples.
