Method

Chicken Tenders

  1. 1

    Prepare Chicken

In a shallow bowl, combine flour, salt, black pepper, and paprika. In another bowl, beat the eggs. In a third bowl, place the breadcrumbs.

  2. 2

    Coat Chicken

Dip each chicken tender into the flour mixture, then into the beaten eggs, and finally coat with breadcrumbs.

  3. 3

    Fry Chicken

Heat vegetable oil in a large skillet over medium-high heat. Fry the chicken tenders until golden brown and cooked through, about 4-5 minutes per side. Remove and drain on paper towels.

Mashed Potatoes

  1. 4

    Boil Potatoes

Peel and cut the russet potatoes into quarters. Boil in salted water until fork-tender, about 15-20 minutes.

  2. 5

    Mash Potatoes

Drain the potatoes and return them to the pot. Add butter, milk, salt, and black pepper. Mash until smooth and creamy.

Creamy Pepper Gravy

  1. 6

    Make Roux

In a saucepan, melt butter over medium heat. Whisk in flour and cook for 1-2 minutes until lightly browned.

  2. 7

    Add Liquids

Slowly whisk in chicken broth and heavy cream. Stir continuously until the gravy thickens, about 5-7 minutes. Season with salt and black pepper to taste.

Sweet Corn

  1. 8

    Cook Corn

In a small saucepan, melt butter over medium heat. Add sweet corn and cook until heated through, about 5 minutes. Season with salt to taste.
