Method
Preparing the Chicken
- 1
Marinate the Chicken
In a large bowl, combine buttermilk, salt, black pepper, garlic powder, onion powder, and paprika. Add the chicken thighs and mix well to coat. Cover and refrigerate for at least 2 hours, preferably overnight.
- 2
Prepare the Coating
In a separate bowl, mix together the all-purpose flour, cornstarch, baking powder, salt, black pepper, garlic powder, onion powder, and paprika.
- 3
Heat the Oil
In a deep skillet or fryer, heat vegetable oil over medium-high heat until it reaches 350°F (175°C).
- 4
Fry the Chicken
Remove the chicken from the marinade and let the excess buttermilk drip off. Dredge each piece in the flour mixture, ensuring it's well coated. Fry the chicken in batches, cooking for about 5-7 minutes per side or until golden brown and cooked through. Drain on paper towels.
Making the Waffles
- 5
Mix Dry Ingredients
In a large bowl, whisk together the all-purpose flour, baking powder, sugar, and salt.
- 6
- 7
Combine Mixtures
Pour the wet ingredients into the dry ingredients and stir until just combined. Avoid overmixing; a few lumps are okay.
- 8
Cook the Waffles
Preheat your waffle iron. Pour an appropriate amount of batter into the preheated waffle iron and cook according to the manufacturer's instructions until golden brown.
