Fries
Truffle Oil and Parmesan
Method
Preparing the Fries
- 1
Cut the Potatoes
Wash and peel the russet potatoes. Cut them into thin strips to form fries.
- 2
Soak the Fries
Soak the cut fries in cold water for at least 30 minutes to remove excess starch.
- 3
Dry the Fries
After soaking, drain the fries and pat them dry with paper towels to remove any moisture.
Frying the Fries
- 4
Heat the Oil
In a deep fryer or a large heavy pot, heat the vegetable oil to 350°F (175°C).
- 5
Fry the Fries
Carefully add the dried fries to the hot oil in batches, and fry for about 5-7 minutes until golden and crispy. Remove with a slotted spoon and drain on paper towels.
- 6
Season the Fries
While the fries are still hot, sprinkle with salt to taste.
Finishing Touches
- 7
Add Truffle Oil
Drizzle the truffle oil over the hot fries while they are still on the paper towels.
- 8
Sprinkle Parmesan
Immediately sprinkle the grated Parmesan cheese over the fries, ensuring they are well coated.
- 9
Garnish (optional)
For an added touch, sprinkle some chopped fresh parsley over the fries before serving.
