Pasta Preparation

    Cook the Fettuccine

    In a large pot of boiling salted water, cook the fettuccine according to package instructions until al dente. Drain and set aside.

Steak Preparation

    Cook the Steak

    In a skillet, heat olive oil over medium-high heat. Season the sirloin steak with salt and black pepper. Add the steak to the skillet and cook for about 4-5 minutes per side for medium-rare, or until desired doneness. Remove from the skillet and let it rest before slicing.

Gorgonzola Sauce Preparation

    Make the Sauce

    In the same skillet used for the steak, melt the butter over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant. Pour in the heavy cream and bring to a gentle simmer. Add the gorgonzola cheese and parmesan cheese, stirring until melted and smooth. Season with red pepper flakes and Italian seasoning.

Combine Ingredients

    Combine the Pasta and Sauce

    Add the cooked fettuccine, spinach, and herb marinated tomatoes to the skillet with the sauce. Toss everything together until the pasta is well coated and the spinach is wilted.

    Slice the rested steak and place it on top of the pasta. Drizzle with additional olive oil if desired, and serve immediately.
