Crust Preparation

Preheat Oven
Preheat the oven to 350°F (175°C).

Mix Crust Ingredients
In a medium bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Mix until well combined.

Press Crust into Pan
Press the mixture firmly into the bottom of a 9-inch springform pan to form an even layer.

Bake Crust
Bake the crust in the preheated oven for 10 minutes, then remove and allow to cool.
Filling Preparation

Cream the Cheese
In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy.

Add Sugar
Gradually add granulated sugar to the cream cheese, mixing until fully incorporated.

Incorporate Sour Cream and Vanilla
Add sour cream and vanilla extract, mixing until smooth.

Add Eggs
Add the eggs, one at a time, mixing on low speed after each addition until just blended.

Fold in Fruit Puree
Finally, gently fold in the seasonal fruit puree until well combined.

Pour Filling into Crust
Pour the cheesecake filling over the cooled crust in the springform pan.
Baking and Cooling

Bake Cheesecake
Bake the cheesecake in the preheated oven for 55-60 minutes, or until the center is set and the edges are lightly browned.

Cool in Oven
Turn off the oven and leave the cheesecake inside for an additional hour to cool gradually.

Remove the cheesecake from the oven and let it cool completely at room temperature before refrigerating for at least 4 hours or overnight.
