Shrimp Preparation

    Prepare the Shrimp

    In a mixing bowl, combine the peeled and deveined shrimp with salt and black pepper. Let it marinate for about 15 minutes.

    Prepare Breading

    In a shallow dish, mix together the all-purpose flour and cornstarch. In another shallow dish, place the beaten eggs.

    Bread the Shrimp

    Dredge each marinated shrimp in the flour-cornstarch mixture, then dip into the beaten eggs, and finally coat again in the flour-cornstarch mixture.

Frying the Shrimp

    Heat the Oil

    In a deep skillet or frying pan, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Fry the Shrimp

    Carefully place the breaded shrimp into the hot oil in batches, making sure not to overcrowd the pan. Fry for about 2-3 minutes or until golden brown and cooked through.

    Drain the Shrimp

    Remove the fried shrimp with a slotted spoon and transfer them to a plate lined with paper towels to drain excess oil.

Rimrock Sauce Preparation

    Mix the Sauce

    In a separate bowl, combine the mayonnaise, sriracha sauce, lemon juice, honey, garlic powder, and paprika. Mix well until smooth.

    Season the Sauce

    Taste the sauce and season with salt and black pepper to your preference.

Final Assembly

    Combine Shrimp with Sauce

    In a large mixing bowl, toss the fried shrimp with the rimrock sauce until well coated.

    Serve the rim rock shrimp hot, garnished with extra sauce if desired, and enjoy!
