    Wash and Slice the Potatoes

    Wash the Russet potatoes thoroughly under cold water. Using a mandoline slicer or a sharp knife, slice the potatoes into thin, even slices (about 1/8 inch thick).

    Soak the Potato Slices

    Place the sliced potatoes in a large bowl of cold water and let them soak for at least 30 minutes. This helps remove excess starch, making the chips crispier.

    Prepare the Seasoning

    In a small bowl, mix together the salt, paprika, garlic powder, and black pepper. Set aside.

Frying

    Heat the Oil

    In a large, heavy-bottomed pot or deep fryer, heat vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Dry the Potato Slices

    After soaking, drain the potato slices and pat them dry with paper towels to remove excess moisture.

    Fry the Potato Slices

    Carefully add a handful of potato slices to the hot oil, making sure not to overcrowd the pot. Fry until golden brown and crispy, about 2-4 minutes. Use a slotted spoon to remove the chips and transfer them to a paper towel-lined plate.
