Preparation of Cheese Blend

    Grate the Cheeses

    Using a box grater, grate the Gouda, Fontina, and Gruyere cheeses until you have roughly 3 cups of a cheese blend.

Bread Assembly

    Prepare the Bread

    Take 2 slices of sourdough bread and lay them out on a clean surface. Evenly distribute half of the grated cheese blend on each slice.

    Add Optional Ingredients

    If using, layer the fresh basil leaves, tomato slices, and caramelized onions on top of the cheese on each slice.

    Complete the Sandwich

    Top each slice with the remaining cheese blend. Place the other two slices of bread on top to form two sandwiches.

Cooking the Sandwiches

    Butter the Bread

    Spread 1 tablespoon of unsalted butter on the outer side of each slice of bread.

    Grill the Sandwiches

    Heat a non-stick skillet over medium heat. Once hot, place the sandwiches in the skillet and cook for about 4-5 minutes, or until golden brown.

    Flip and Cook

    Carefully flip the sandwiches and grill the other side for another 4-5 minutes until golden brown and the cheese is melted.

Serving

    Slice and Serve

    Remove the sandwiches from the skillet, allow to cool for a minute, then slice in half and serve warm.
