Method
Preparing the Seafood

Clean and Prepare Seafood
Peel and devein the prawns, removing the shell and tail. Pat dry with paper towels. For the sea scallops, remove any tough muscle attached and pat dry. Cut halibut fillets into bite-sized pieces.
Making the Batter

Combine Dry Ingredients
In a large bowl, whisk together the all-purpose flour, cornstarch, baking powder, salt, and black pepper until well combined.

Add Wet Ingredients
Gradually add the cold water and beer (if using) to the dry ingredients, whisking until the batter is smooth and slightly thick. Let the batter rest for about 15 minutes.
Making the Tartar Sauce

Mix the Sauce
In a small bowl, combine mayonnaise, finely chopped dill pickles, lemon juice, capers, and fresh dill. Mix well and refrigerate until ready to serve.
Frying the Seafood

Heat the Oil
In a deep frying pan or pot, heat oil to 180°C (350°F). Ensure there is enough oil to fully submerge the seafood.

Dip and Fry
Dip each piece of prepared seafood into the batter, allowing excess to drip off, then carefully place in the hot oil. Fry in batches for about 3-4 minutes or until golden brown and cooked through. Remove with a slotted spoon and drain on paper towels.
Serving

Plate the Dish
