Preparation

    Preheat the Oven

    Preheat your oven to 400°F (200°C) to ensure it's ready for the steak.

    Season the Steak

    Pat the sirloin steak dry with paper towels. Rub olive oil all over the steak and generously season it with salt, black pepper, and garlic powder on both sides.

    Wrap the Steak

    Take the applewood smoked bacon slices and wrap them around the sirloin steak, overlapping slightly. Secure the bacon with toothpicks if necessary.

Cooking

    Sear the Steak

    In a large oven-safe skillet, heat a tablespoon of olive oil over medium-high heat. Once hot, carefully place the wrapped steak in the skillet and sear for about 3-4 minutes on each side until the bacon is crispy and browned.

    Bake the Steak

    Transfer the skillet to the preheated oven and bake for 10-15 minutes, or until the internal temperature of the steak reaches your desired doneness (130°F for medium-rare, 140°F for medium).

    Remove the skillet from the oven and transfer the steak to a cutting board. Let it rest for about 5 minutes to allow the juices to redistribute.

    Remove the toothpicks if used, then slice the steak against the grain into thick slices. Garnish with freshly chopped rosemary and serve hot.
