Prepare the Grits
In a large saucepan, bring 4 cups of water to a boil. Add 1 cup of stone-ground grits and stir well. Reduce the heat to low and cook, stirring occasionally, until the grits are thick and creamy, about 20-25 minutes. Stir in the heavy cream, 2 tablespoons of butter, and salt. Keep warm.

Cook the Shrimp
In a large skillet, melt 2 tablespoons of butter over medium heat. Add minced garlic and sauté for 1 minute until fragrant. Add the shrimp, Cajun seasoning, black pepper, and lemon juice. Cook until the shrimp are pink and opaque, about 3-5 minutes.

Assemble the Dish
Spoon the creamy grits onto plates and top with the sautéed shrimp. Garnish with chopped green onions. Serve immediately.
