Prepare the Cauliflower
Preheat your oven to 425°F (220°C). Remove the leaves from the cauliflower and cut it into florets.

Season the Cauliflower
In a large bowl, toss the cauliflower florets with olive oil, salt, and black pepper until evenly coated.

Roast the Cauliflower
Spread the seasoned cauliflower florets in a single layer on a baking sheet. Roast in the preheated oven for about 25-30 minutes, or until the florets are golden brown and tender.

Remove the baking sheet from the oven and sprinkle the grated Gruyère cheese evenly over the roasted cauliflower. Return to the oven and bake for an additional 5-7 minutes, or until the cheese is melted and bubbly.
