Prepare the Ingredients
Gather the sourdough bread, cheddar cheese, and butter. Slice the cheddar cheese into even pieces if not pre-sliced.

Butter the Bread
Spread 1 tablespoon of butter on one side of each slice of sourdough bread.

Assemble the Sandwich
Place two slices of bread, buttered side down, on a clean surface. Layer 4 oz of cheddar cheese on top of each slice. Cover with the remaining two slices of bread, buttered side up.

Serve
Remove the grilled cheese from the skillet, cut in half, and set aside.
Fries

Prepare the Potatoes
Wash and peel the potatoes. Cut them into thin strips to resemble fries.

Season the Fries
In a large bowl, toss the cut potato fries with olive oil, salt, black pepper, and paprika until evenly coated.

Bake the Fries
Preheat the oven to 425°F (220°C). Spread the fries in a single layer on a baking sheet. Bake for 25-30 minutes, flipping halfway through, until they are crispy and golden.

Once the fries are cooked, remove from the oven and serve immediately alongside the grilled cheese.
