Preparation of Sturgeon

    Marinate the Sturgeon

    In a bowl, mix olive oil, lemon juice, minced garlic, chopped dill, salt, and black pepper. Place the sturgeon fillets in the bowl and coat them well with the marinade. Cover and refrigerate for at least 30 minutes.

    Cook the Sturgeon

    Heat a non-stick skillet over medium heat. Remove the sturgeon fillets from the marinade and place them in the skillet. Cook for about 4-5 minutes on each side or until the fish is golden brown and flakes easily with a fork.

Preparing the Accompaniments

    Cook the Quinoa

    In a medium saucepan, bring the vegetable broth to a boil. Add the rinsed quinoa, reduce heat to low, cover, and simmer for about 15 minutes or until the quinoa is fluffy and the liquid is absorbed. Remove from heat and let it sit for 5 minutes before fluffing with a fork.

    Prepare the Asparagus and Tomatoes

    In another skillet, heat a little olive oil over medium heat. Add the asparagus spears and sauté for about 5 minutes. Then add the halved cherry tomatoes and cook for an additional 3-4 minutes until the vegetables are tender but still crisp.

    Serve the Dish

    On a plate, place a serving of quinoa in the center, top it with the cooked sturgeon fillet, and arrange the sautéed asparagus and cherry tomatoes around it. Garnish with extra dill if desired.
