1. Prepare the Apples

Wash and core the fresh apples. Cut them into quarters without peeling.

2. Combine Ingredients

In a large pot, combine the quartered apples, granulated sugar, water, lemon juice, cinnamon sticks, cloves, and nutmeg.

Cooking

3. Cook the Mixture

Bring the mixture to a boil over medium heat. Once boiling, reduce heat and let it simmer for about 30 minutes until the apples are soft.

4. Mash the Apples

Using a potato masher or a large fork, mash the softened apples to release their juices.

5. Strain the Mixture

Strain the apple mixture through a fine mesh strainer or cheesecloth into another pot or large bowl to separate the liquid from the solids.

Fermentation

6. Add Yeast

Once the liquid has cooled to room temperature, sprinkle the yeast over the top and stir gently to combine.

7. Ferment the Cider

Pour the mixture into a fermentation vessel, seal with an airlock, and let it ferment in a cool, dark place for 1 to 2 weeks until bubbling slows down.

Bottling

8. Bottle the Cider

Once fermentation is complete, carefully siphon the cider into bottles, leaving some space at the top. Seal the bottles with caps.

9. Refrigerate and Serve

Refrigerate the bottles for at least 24 hours before serving. Chill thoroughly before pouring into a glass and enjoying your Golden State Cider.
