Preparation of Sturgeon

Season the Sturgeon
Pat the California white sturgeon fillets dry with paper towels. Sprinkle your choice of lemon pepper or Cajun spices evenly over both sides of the fillets. Let them sit for about 10 minutes to absorb the flavors.

Preparation of Sour Cream Dill Sauce

Mix the Sauce
In a medium bowl, combine the sour cream, chopped fresh dill, lemon juice, and garlic powder. Mix well until all ingredients are blended. Taste and adjust seasoning if necessary. Refrigerate until ready to use.

Serve
