Prepare Black Bean Corn Salsa

Mix the Salsa
In a medium bowl, combine the black beans, corn, diced red bell pepper, diced red onion, and chopped cilantro. Add lime juice, salt, and black pepper. Stir until well mixed. Set aside.
Make Zesty Southwest Dressing

Whisk the Dressing
In a small bowl, whisk together olive oil, apple cider vinegar, honey, chili powder, garlic powder, cumin, salt, and black pepper until smooth and combined.
Assemble the Salad

Combine Ingredients
In a large bowl, place the mixed baby greens. Top with tortilla strips, diced tomatoes, chopped green onions, and the prepared black bean corn salsa.

Add Dressing
Drizzle the zesty southwest dressing over the salad ingredients. Toss gently to combine.

If desired, add sliced grilled chicken or cooked shrimp on top of the salad.
