Our smoked sturgeon is prepared daily in house and is served with capers, thinly sliced red onions, cream cheese and sourdough bread. A house favorite!

Method

Preparation of Sturgeon

    Marinating the Sturgeon

    In a bowl, mix the olive oil, salt, and black pepper. Rub this mixture evenly over the sturgeon fillet. Marinate for at least 30 minutes in the refrigerator.

    Preparing the Smoker

    Soak the hickory wood chips in water for at least 30 minutes. Preheat your smoker to 200°F (93°C). Drain the wood chips and add them to the smoker box.

    Smoking the Sturgeon

    Place the marinated sturgeon fillet on the smoker rack. Close the smoker and smoke the sturgeon for about 2 hours, or until it reaches an internal temperature of 145°F (63°C).

    Cooling the Sturgeon

    Once smoked, remove the sturgeon from the smoker and let it cool at room temperature for 15 minutes before slicing.

Serving Preparation

    Preparing the Garnishes

    While the sturgeon is cooling, thinly slice the red onion and set aside. Make sure the capers are drained and ready to serve.

    Toasting the Sourdough

    Lightly toast the sourdough bread slices until golden brown.

    Plating the Dish

    On a serving platter, arrange the smoked sturgeon slices. Serve with the capers, sliced red onions, cream cheese, and toasted sourdough bread on the side.
