Omelet Base

Preparing the Filling

    Prepare the Seafood

    If using shrimp, peel and devein them. If using crab, ensure it is cooked and flaked. Chop the shrimp into smaller pieces if needed.

    Prepare the Avocado

    Slice the avocado in half, remove the pit, and scoop the flesh into a bowl. Mash it lightly with a fork and season with a pinch of salt.

    Chop the Green Onions

    Finely chop the green onions and set aside. If using cilantro, chop it finely as well.

Making the Omelet

    Whisk the Eggs

    In a mixing bowl, whisk together the eggs, milk, salt, and black pepper until well combined.

    Cook the Omelet

    Heat the butter in a non-stick skillet over medium heat until melted and bubbling. Pour in the egg mixture and let it cook for about 2-3 minutes until the edges begin to set.

    Add the Filling

    Once the edges of the omelet are set but the top is still slightly runny, add the shrimp or crab meat, mashed avocado, shredded cheese, and chopped green onions on one half of the omelet.

    Fold and Finish Cooking

    Carefully fold the omelet in half over the filling. Cook for an additional 2-3 minutes until the cheese melts and the omelet is cooked through.

    Serve

    Slide the omelet onto a plate and garnish with cilantro if desired. Serve warm.
