Method

Preparation

  1. 1

    Prepare the Ingredients

Chop the fresh clams, dice the potatoes, and chop the onion and celery. Set aside.

  2. 2

    Cook the Vegetables

In a large pot, melt the butter over medium heat. Add the chopped onion and celery, and sauté until they are translucent, about 5 minutes.

Cooking

  1. 3

Add the Potatoes and Clam Juice

Stir in the diced potatoes and clam juice. Bring to a gentle boil, then reduce heat to a simmer. Add the thyme, bay leaf, salt, and pepper. Cook uncovered until the potatoes are tender, about 15-20 minutes.

  2. 4

    Add the Clams and Cream

Once the potatoes are tender, add the chopped clams and heavy cream. Stir well and let it cook for an additional 5 minutes, allowing the flavors to meld.

Serving

  1. 5

    Garnish and Serve

Remove the bay leaf. Ladle the chowder into cups. Garnish with crumbled bacon and chopped parsley before serving.
