Method

Prepare the Salad Base

  1. 1

    Wash the Greens

Thoroughly wash the mixed greens under cold running water. Drain well and place them in a large salad bowl.

  2. 2

    Chop the Vegetables

Slice the cherry tomatoes in half. Peel and slice the cucumber into thin rounds. Slice the red onion into thin rings. Grate or julienne the carrot. Dice the bell pepper into small pieces.

  3. 3

    Combine the Ingredients

Add the chopped vegetables (cherry tomatoes, cucumber, red onion, carrots, and bell pepper) to the bowl with the mixed greens. Toss gently to combine.

Make the Dressing

  1. 4

    Combine Dressing Ingredients

In a small bowl, whisk together the olive oil, balsamic vinegar, Dijon mustard, honey, salt, and black pepper until the dressing is well combined and emulsified.

Assemble the Salad

  1. 5

    Dress the Salad

Drizzle the dressing over the salad mixture in the large bowl. Toss gently to ensure all ingredients are coated with the dressing.

  2. 6

    Add Optional Toppings

If desired, sprinkle feta cheese, add sliced avocado, and chopped nuts on top of the salad.
