A combination of smoked salmon, smoked sturgeon, peel and eat prawns and cajun chicken strips. Served on a bed of mixed baby greens with our house dressing.

Method

Preparation of Seafood

    Prepare the Seafood

    Arrange the smoked salmon and smoked sturgeon on a large platter. Set aside.

    Cook the Prawns

    In a pot of boiling salted water, add the peeled and deveined prawns. Cook for 2-3 minutes until they turn pink and opaque. Drain and cool under cold running water. Set aside.

Preparation of Chicken

    Cook the Cajun Chicken Strips

    In a skillet over medium heat, add a little oil and cook the cajun chicken strips for 5-7 minutes until cooked through and browned. Once done, remove from heat and let them rest.

Preparation of Greens

    Prepare the Mixed Baby Greens

    Rinse the mixed baby greens under cold water and pat them dry with paper towels. Place them in a large bowl.

Making the House Dressing

    Combine Dressing Ingredients

    In a small bowl, whisk together olive oil, red wine vinegar, Dijon mustard, honey, salt, and black pepper until well combined.

Assembly

    Assemble the Platter

    On the bed of mixed baby greens, arrange the smoked salmon, smoked sturgeon, cooked prawns, and cajun chicken strips. Drizzle the house dressing over the top just before serving.
