Method

Preparation

  1. 1

    Cook the Linguini

In a large pot of salted boiling water, cook the linguini according to package instructions until al dente. Drain and set aside.

  2. 2

    Prepare the Clams

While the pasta is cooking, clean the clams under cold running water to remove any sand or grit. Discard any clams that are open and do not close when tapped.

Making the Clam Sauce

  1. 3

    Sauté Garlic

In a large skillet, heat 2 tablespoons of olive oil and 2 tablespoons of butter over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.

  2. 4

    Add Clams and Wine

Increase the heat to medium-high, then add the cleaned clams to the skillet. Pour in the white wine and sprinkle with red pepper flakes, salt, and black pepper. Cover the skillet and cook for about 5-7 minutes until the clams open.

  3. 5

    Finish the Sauce

Once the clams are opened, discard any that remain closed. Add the remaining 2 tablespoons of butter and chopped parsley to the skillet. Stir to combine and let it simmer for another 2 minutes.

Combining

  1. 6

    Combine Pasta and Sauce

Add the cooked linguini to the skillet with the clam sauce. Toss everything together until the pasta is well coated with the sauce.

  2. 7

    Serve

Serve the clam linguini hot, garnished with grated Parmesan cheese on top.
