    Dice the bell peppers, onion, and tomatoes. Set aside.

    Beat the Eggs

    In a bowl, crack the eggs and beat them until well mixed. Add a pinch of salt and pepper.

Cooking

    Cook the Chorizo

    In a large skillet, heat olive oil over medium heat. Add the chorizo and cook until browned and cooked through, about 5-7 minutes.

    Sauté Vegetables

    Add the diced onion and bell peppers to the skillet with the chorizo. Sauté for about 3-4 minutes until softened.

    Add Tomatoes

    Stir in the diced tomatoes and cook for another 2 minutes until they are slightly softened.

    Pour the beaten eggs into the skillet. Stir gently to combine with the chorizo and vegetables. Cook until the eggs are just set, about 3-4 minutes.
