For the Chicken Fried Steak

Prepare the Coating
In a shallow bowl, combine flour, salt, black pepper, and cayenne pepper. Mix well.

Prepare the Buttermilk Mixture
In another shallow bowl, whisk together buttermilk and eggs until smooth.

Coat the Steaks
Dip each beef cube steak first in the buttermilk mixture, allowing excess to drip off, then dredge it in the flour mixture, pressing to adhere. Place coated steaks on a plate.

Fry the Steaks
In a large skillet, heat vegetable oil over medium-high heat. Once hot, carefully add the coated steaks and fry until golden brown, about 3-4 minutes per side. Remove and drain on paper towels.
For the Sausage Gravy

Cook the Sausage
In a skillet over medium heat, crumble and cook the breakfast sausage until browned, about 5-7 minutes.

Make the Roux
Sprinkle the flour over the cooked sausage and stir for 1-2 minutes until the flour is golden.

Add Milk
Gradually whisk in the milk, stirring constantly until the gravy thickens, about 5 minutes. Season with black pepper and salt to taste.
