Method

For the Catfish

  1. 1

    Prepare the Catfish

Rinse the catfish fillets under cold water and pat them dry with paper towels.

  2. 2

    Season the Fillets

In a small bowl, mix together Cajun seasoning, salt, and black pepper. Rub this mixture evenly over both sides of the catfish fillets.

  3. 3

    Grill the Catfish

Preheat the grill to medium-high heat. Brush the grill grates with olive oil to prevent sticking. Place the fillets on the grill and cook for about 4-5 minutes on each side or until the fish is cooked through and flakes easily with a fork.

For the Mango Salsa

  1. 4

    Mix the Salsa Ingredients

In a medium bowl, combine diced mango, red bell pepper, red onion, cilantro, lime juice, and salt. Gently toss until all ingredients are well mixed.

  2. 5

    Chill the Salsa

Let the salsa sit for at least 10 minutes to allow the flavors to meld together.

For the Eggs

  1. 6

    Cook the Eggs

In a non-stick skillet, melt the butter over medium heat. Crack the eggs into the skillet and season with salt. Cook the eggs to your desired doneness, whether sunny side up, over easy, or scrambled.
