Prepare Catfish

    Season the Catfish

    In a small bowl, mix together the Cajun seasoning, olive oil, lemon juice, salt, and black pepper. Rub this mixture evenly over the catfish fillets.

    Preheat your grill to medium-high heat, about 375°F (190°C).

    Place the seasoned catfish fillets on the grill. Cook for about 4-5 minutes on each side, or until the fish flakes easily with a fork and has a nice char.

Make Mango Salsa

    In a medium bowl, combine the diced mango, red onion, chopped cilantro, lime juice, minced jalapeño, and salt. Mix well to combine.

    Let the mango salsa sit for at least 10 minutes to allow the flavors to meld together.
