Method
Prepare Chicken Strips
- 1
Cut Chicken
Slice the chicken breast into thin strips, about 1 inch wide.
- 2
Season Chicken
In a large bowl, combine the chicken strips with olive oil, Cajun seasoning, salt, and black pepper. Toss until the chicken is evenly coated.
- 3
Grill Chicken
Preheat your grill or grill pan over medium-high heat. Once hot, add the seasoned chicken strips and grill for about 5-7 minutes on each side, or until fully cooked and golden brown. Remove from heat and let rest for a few minutes before slicing into bite-sized pieces.
Prepare Salad
- 4
Chop Vegetables
While the chicken is grilling, wash and chop the mixed baby greens. Halve the cherry tomatoes, slice the cucumber into thin rounds, and finely slice the red onion.
- 5
Assemble Salad
In a large salad bowl, combine the mixed baby greens, cherry tomatoes, cucumber, and red onion. Toss gently to mix.
- 6
Add Chicken
Once the chicken has cooled slightly, add the grilled chicken strips on top of the salad.
- 7
Dress Salad
Drizzle your house dressing over the salad and chicken. Toss gently to combine and serve immediately.
