Prepare the Ingredients
Clean the wild mushrooms thoroughly under running water, and slice them into bite-sized pieces. Peel and dice the onion, and mince the garlic cloves.

Sauté the Base
In a large pot, heat a tablespoon of olive oil over medium heat. Add the diced onion and cook until translucent, about 5 minutes. Add the minced garlic and sauté for an additional minute until fragrant.

Add Broth and Herbs
Pour in the vegetable broth and add the fresh thyme, salt, and black pepper. Bring the mixture to a boil, then reduce the heat and let it simmer for 15 minutes.
- 5
Blend the Soup
Using an immersion blender, blend the soup until smooth. If you prefer a chunkier texture, blend just half of the soup and leave the rest as is.
- 6
Finish with Cream and Seasoning
Stir in the heavy cream and adjust seasoning if necessary. Allow the soup to heat through for another 5 minutes.

Serve
Ladle the soup into bowls, drizzle with truffle oil, and garnish with fresh parsley before serving.
