Method
For the Vickle Fries
- 1
Prepare the Pickles
Slice each dill pickle lengthwise into quarters to create fry-shaped pieces. Pat them dry with paper towels to remove excess moisture.
- 2
Make the Batter
In a mixing bowl, combine the flour, cornstarch, baking powder, salt, black pepper, and garlic powder. Whisk together until well mixed.
- 3
Add Buttermilk
Gradually add the buttermilk to the dry ingredients, stirring until you achieve a smooth batter. It should be thick enough to coat the pickles.
- 4
Heat the Oil
In a deep pot or frying pan, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). Use a thermometer for accuracy.
- 5
Fry the Pickles
Dip each pickle quarter into the batter, allowing excess to drip off. Carefully place them in the hot oil, frying in batches to avoid overcrowding. Fry for about 3-4 minutes or until golden brown.
- 6
Drain and Serve
Remove the fried pickles with a slotted spoon and drain on paper towels. Sprinkle with additional salt if desired.
For the Chipotle Ranch Dipping Sauce
- 7
Combine Ingredients
In a small bowl, mix together the ranch dressing, chipotle in adobo sauce, lime juice, garlic powder, and salt.
- 8
Mix Well
Stir until all ingredients are fully combined and the sauce is smooth.
- 9
Serve
Transfer the dipping sauce to a serving bowl and serve alongside the fried dill pickles.
